We eat pasta entirely too much in this house.
Also, Kyle doesn’t eat vegetables. Much.
It’s frustrating. I’m trying to find ways to stick veggies into whatever I can. The kids eat them pretty well.
And then, this happened.
A lot of cheese. A bit of ham. It worked.
Ham And Peas Tortellini
1 lb. frozen tortellini
1 c. frozen peas (don’t use canned, the turnout will be mushed peas)
3 tbsp. butter, cut into pieces
1/2 c. heavy cream
1/2 c. grated parmesan cheese
1/4 lb. ham, chopped (I used deli sliced ham and chopped it up)
salt and pepper to taste
Bring a large pot of water to a boil. Add some salt to it, too.
Boil your tortellini as per the directions on the package.
For the last 30 seconds or so of your boiling pasta, add the peas.
Drain the tortellini and peas. Add in the ham, butter, cheese, salt, pepper, and cream. Keep it on low to medium heat.
Mix it WELL. And KEEP mixing, or else you’ll risk having a burned mess. Keep it on the heat until everything is melted all together and just looks like a pot of deliciousness. It’ll probably take about 3-4 minutes, depending on the amount of heat you’re using.
Then throw it on a plate. How simple is that, huh?
And this went over EXTREMELY well with Kyle and the kids. I’m still iffy on how I feel about it. It WAS good, but I’m not sure that it’s a favorite of mine, if that makes sense. The kids asked for extras, though. Can’t complain about that, right?
